Homemade: Mincemeat Shortbread Slab


As part of our Homemade series, Chef Director, Ross Pike, shows us how to make Mincemeat Shortbread Slab.



  • 360g plain flour

  • 310g caster sugar

  • 250g butter

  • 1 tsp vanilla paste

  • 1 jar of mincemeat



  1. Blend together the flour, sugar, butter and vanilla paste until the mixture forms breadcrumbs

  2. Line a tray with baking paper and add half the shortbread mixture, pressing it in firmly

  3. Spoon the mincemeat onto the shortbread and spread evenly.

  4. Add the other half of the shortbread mixture over the top.

  5. Sprinkle with sugar

  6. Bake in an oven at 170c for 50 minutes

  7. Once removed from the oven, add a little more sugar and leave to cool.

  8. Slice, serve and enjoy
